These fresh Speckled Trout were caught around Chandeleur Islands about 40 miles south of Gulfport, Mississippi. The sizes are running 1-1.5lb whole fish or a 3/5oz fillet. Speckled trout are favored across the South for their flavor and texture. Smaller fish are often cooked whole, stuffed with herbs and lemons. Local Gag & Scamp Grouper
These beautiful Grouper were caught by a local boat right out the Gulf of Mexico. The Gag Groupers are running 20-30lbs & the Scamp Groupers are running 14-16lbs. Groupers have a mild but distinct flavor, somewhere between seabass and halibut. The raw meat of both is white and lean with a notable lack of bones. Cooked, the white meat has a very firm texture and heavy flake and remains moist.
