Speckled Trout

These fresh Speckled Trout were caught around Chandeleur Islands about 40 miles south of Gulfport, Mississippi. The sizes are running 1-1.5lb whole fish or a 3/5oz fillet. Speckled trout are favored across the South for their flavor and texture. Smaller fish are often cooked whole, stuffed with herbs and lemons. Speckled Trout has been the favorite fish in white-tablecloth restaurants for decades. Call us to add to your menu!



 

Local Gag & Scamp Grouper

These beautiful Grouper were caught by a local boat right out the Gulf of Mexico. The Gag Groupers are running 20-30lbs & the Scamp Groupers are running 14-16lbs. Groupers have a mild but distinct flavor, somewhere between seabass and halibut. The raw meat of both is white and lean with a notable lack of bones. Cooked, the white meat has a very firm texture and heavy flake and remains moist.
